James Beard- and André Simon-nominated writer and photographer Nicholas Gill has spent the past fifteen years intensely exploring the foodways of Latin America, from remote corners of the Amazon Rainforest to the islands of Patagonia. Gill, based in New York and Lima, Peru, is the co-author of Central (2016) and The Latin American Cookbook (2021) with Peruvian chef Virgilio Martinez, as well as Slippurinn (2021) with Icelandic chef Gísli Matthías Auðunsson. All three books were published by Phaidon. He has appeared on the Netflix series Chef’s Table and was a consulting producer for the series Street Food: Latin America.
Additionally, Gill is a co-founder of the award-winning culinary newsletter and podcast New Worlder and is a regular contributor to publications such as The New York Times, Saveur, New York Magazine, The Wall Street Journal, The Guardian, and Fool. He has lectured on different facets of Latin American cuisine at the University of Gastronomic Sciences in Pollenzo, Italy and the Basque Culinary Center in San Sebastián, Spain.
